Emily's Baobab, Coconut & Pineapple Loaf

Ingredients

1 tbsp Minvita Baobab Superfruit Powder
1 cup spelt flour
1 cup dessicated coconut
1 mashed ripe banana (1/2 cup)
1/2 cup soy yoghurt
1/4 cup coconut sugar (use 1/2 cup if you'd prefer it a little sweeter)
1 flax egg
1/2 tsp vanilla extract
1 tsp baking powder
1/2 tsp ginger (optional)
3 rings of dried pineapple

Health blogger Emily from Em’s Vegan Eats created this delicious, vegan loaf after “missing summer – the longer days, warmer nights, sunshine and the amazing tropical summer flavours”. She describes this recipe as “moist, gooey, sweet and studded with chunks of pineapple”. If you’re craving something exotic in January and want to reap the outstanding health benefits of baobab, follow Emily’s three simple steps for the perfect Baobab, Coconut & Pineapple Loaf…

1. Preheat your oven to 120 degrees and grease/line a loaf tin

2. Mix all of the ingredients together into a bowl until well combined

3. Transfer mixture into your loaf tin and bake for around 30 minutes or until golden/a knife comes out clean. Enjoy!
