Healthy Jon's Vegan Chocolate Tartlets
Base:
160g mixed nuts (or nuts of your choice)
35g cacao nibs
12 medjool dates
2 tbsp cacao powder
Pinch pink Himalayan rock salt
Filling:
1/2 can coconut milk
120g dark vegan chocolate
1 tsp baobab powder (Minvita)
Garnish:
Cacao powder
Strawberries
Mint

If you read our recent roundup of Healthy Feeds to Follow, you’ll recognise Healthy Jon. Jon’s Instagram page has long been a source of inspiration for us here. Go on, take a peek, you’ll be tempted by all manner of healthy morsels. What’s more, you’ll see that it’s more than possible to get lean while enjoying a balanced existence. Yes, this health food and fitness blogger –and, not to mention, England Touch Rugby player– sure knows how to enjoy a good slither of sweet. And we’re all for that!
Today’s ‘sweet’ comes in tasty tartlet form, with Jon’s mineral-rich, dairy-free, gluten-free Vegan Chocolate Tartlets.
How to make yours (5 individual tartlets)…
Weigh out the nuts and cacao nibs, add to a food processor, and blend until relatively fine. Add the cacao powder, dates and salt, then blitz until it starts to come together.
Pour the mixture into your tartlet trays and spread evenly across the bottom and up the sides. Place in the fridge to firm up.
Measure out the chocolate and place into a glass bowl over some boiling water. Wait for it to melt, stirring occasionally.
When melted, pour in half a can of coconut milk (making sure that it hasn’t separated in the can first). Mix well, add the baobab powder and then pour into the tartlet bases.
Put them back in the fridge for at least an hour or two to set, then garnish and serve.
