Rooibos Matcha Cookies
2 medium bananas
2 cups gluten-free oats
1 tbsp Minvita Rooibos Matcha Powder
1/2 cup Minvita Cacao Superfood Nibs
1 1/2 cups ground almonds
3 tbsps pure maple syrup
With just 6 ingredients – and in about 20 minutes – you can make these superfood infused cookies! The second in our #onegoodthing challenge inspirations, these cookies contain only whole food ingredients.
This is a dairy-free, soya-free, gluten-free and vegan option that will suit the whole family. Or, for extra brownie (/cookie) points, the whole office!
The Cacao and Rooibos Matcha serve up a double-dose of magnesium – one of the most calming ingredients around. Furthermore, the potassium content makes these great for a post-exertion bite.
Tip: this recipe is on the grownup side of sweet (with the Rooibos Matcha lending a subtle fruity tang), but you can always add a little more maple syrup to preference.
Quantity makes 10 hearty cookies!
Pre-heat the oven to 180C and line your baking tray with parchment paper.
We made these the old-fashioned way sans food processor – if you’d rather use one, chuck all ingredients in and blitz. Otherwise, grab a spoon and get mashing and mixing!
Once the ingredients are evenly mixed, and delightfully Rooibos red, spoon your mixture into 10 similarly sized circles. Press into shape with your hands, allowing the cookies to retain some organic charm!
Bake for 15 minutes.
Serve with a big mug of your favourite superfood tea. Rooibos Matcha recommended!
